What's For Dinner?

This past weekend, I spent a ridiculous amount of money on groceries in addition to many other items that I will not go into.  So needless to say, I spent a lot of money on food and I have been bound and determined not to eat out unless I absolutely had to.

Everything I cook is mostly taken or inspired by my mother, Leigh Anne.  Thanks to her, I know nothing about cooking "bad" and a lot (or decent amount) about cooking healthy.  I really hope my future husband doesn't expect me to cook fried chicken or gravy...because he will be SOL!

So let's start with Sunday night.  I discovered in my cabinets, while doing a massive clean up of my apartment, that we had a crock pot.  I was thrilled! I had just told my parents that I wanted a crock pot for Christmas, which depressed me because I felt old for asking for cookware for Christmas.  And this was my creation....

1. Cooked the chicken on "high" in the crockpot for about 4 hours. The seasonings included 1/3 cup apple cidar vinegar, cinnamon and papreka. (This was inspired by my mom's cooking from the previous weekend.)
Note: These seasonings contain VERY little calories and creates a great flavor!
2. Sauteed frozen broccoli and spinach in a wok (added a little olive oil and Mrs. Dash Lemon Pepper)
3. Made quinoa (which lasted me for 4 meals and it's SO easy to make!)
-I put the vegetables over the quinoa and added 1/2 cup of reduced sodium blue cheese, whole unsalted almonds and drizzled Light Asian Sesame Vinaigarette.

Not to toot my own horn, but I thought the meal was delicious.  It made enough to provide leftovers for lunch on Monday!
